...I figured I should actually write a blog post. I think about writing posts, but if I don't feel like it right then or if I postpone writing, I don't actually sit down and type anything out. I'm not one of those people who writes out posts in advance and then schedules them to post on their own. I tried that once, and the post didn't go up like it was supposed to, so I had to post it myself after all.
ANYWAY, today, I have a recipe.
Amos and I have been trying to eat more protein and fewer carbs for quite a while now in an effort to help Amos out, though we have always eaten healthy stuff. I thought I was doing pretty well, but then I found out that a lot of food that I thought was low-carb really wasn't. :P That was a rather discouraging day.
So, I am trying to use ingredients with lots of protein, such as beans, plain yogurt, cottage cheese, etc. I even bought whey protein powder! Is it helping? I don't know. But I like to think it is. ;) This morning I made pancakes, and they were really good! They have a lot of healthy stuff in them, but they don't taste "healthy"...unlike the waffles I made last week. I looked in my Betty Crocker cookbook, the paperback one with the front pages falling out, to make sure that the pancake ingredient proportions were correct.
And, here we go. :)
Cinnamon Oatmeal Pancakes
1/2 cup all purpose flour
1/4 cup whole wheat flour
1/2 cup quick-cooking oats (it's the oatmeal that is chopped up really fine)
3 tablespoons wheat germ (optional)
3 tablespoons protein powder (optional)
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/8 teaspoon ginger (optional)
Mix the dry ingredients, then add the wet ingredients...
1/2 cup plain yogurt
1/4-1/3 cup milk (the batter was thick, so I added more)
1 egg, beaten
2 tablespoons vegetable oil
4 tablespoons brown sugar
Mix until all is combined.
Cook on a greased griddle or skillet over medium heat.
